PROFILE
Chef Paul Pairet’s multi-sensory high-end dining hidden in an old Shanghai neighborhood is arguably one of the most innovative restaurants in the world. Serving only 10 diners at a time, Ultraviolet offers high-concept Western cuisine of a 20-course menu in a high-tech private dining room that manipulates and melds light, sound, scent and theatre to deliver a culinary experience diners have never imagined.

Egg gruyere raviolo with truffle and asparagus is a must-try and foie gras cigarette.
AMBIENCE
The exquisite courses are paired with surround-sound music, video projection technology turns which transform the floor-to-ceiling screens throughout the dinner, and scents emanating from a state-of-the-art fragrance diffuser. Parties are limited to 10 only and there is one seating per night.
SERVICE
The delicate and artful presentation of meals, seafood, meats, drinks, and sweet creations is nothing short of five stars. The dinner starts with the restaurant transporting you from a location to the unmarked restaurant where different magic awaits you as electronic doors open in stages.
FOOD
The dishes are made up of three European-style set menus (UVA, UVB, and UVC) rotations.: UVA, UVB, and UVC. Each of the 20 courses is designed to be accompanied by a different sensory mood (sounds, scents, and images) as well as 360-degree video projections. The full dinner includes courses such as ‘Foie gras, Tomato Mozza, oysters with caviar and pepper, Ice cream of Yakult and orange blossom. Many of the courses are paired with drinks ranging from dessert wine to peppermint tea. PRICING Starts from 4000 RMB, including “Atmosphere and Drinks”.

Ultraviolet isn’t just a typical restaurant or fine dining event Instead, refer to it as an all-senses-on-deck gustatory experience. Seats at Ultraviolet are made available three months in advance where you will be required to put down a deposit.
