The pioneer who introduced Sanuki udon to Osaka is credited with teaching Edobori Kida's owner-chef his trade. His specialty is making udon that is never sticky and is always smooth. Sanuki udon has a distinctly distinct flavor and texture. They are prepared by hand using a backbreaking and foot-breaking procedure, and they are carefully cooked until they are perfectly tender when served.
