The soup at this ramen establishment, which was opened by a dried goods wholesaler, is what best represents the quality of the dashi soup stock. Several varieties of dried fish flakes contribute to its complex scent. Chicken bones, pike conger, and Kombu kelp all contribute layers of flavor that give the dish weight and finish. Two varieties of homemade noodles to increase the flavor—flat ones for soaking up the soup and round ones for texture.
