OVERVIEW
Offering a vibrant multi-sensory dining experience that challenges the traditional dining and drinking experience, COBA is a gastronomic journey where food, ambiance, and experience seamlessly blend.
You enter the restaurant on a gorgeous 14-seat bar and on both sides, two rooms. The dining room with 4 big tables and a nice sofa for big parties and the terrace, covered with rainforest greenery and glass windows offers around 30 extra seats. Total of around 50 seats + 14 at the bar.
AMBIENCE
COBA’s rainforest-inspired interior, rich in textures and contrasts, will create a visually captivating environment that evokes an ambiance of exclusivity while embodying the warmth and hospitality Thailand is famed for. Looking north from Bangkok to the Thai Highlands around Chiang Mai, COBA will feature two intricate, artisanal wall panels from the storied handicraft village of Baan Tawai.
Carved from the teak wood which grows locally in abundance, these commissions will reflect the restaurant’s commitment to sustainability and heritage, as well as design which reflects the diversity of Thai culture. COBA will work further to support this traditional art form by reinvesting in Baan Tawai using a percentage of proceeds from a signature cocktail. COBA is set to become a vibrant social hub, hosting a weekly lineup of curated, immersive entertainment to create a multisensory experience, blending dining and entertainment in one bespoke-designed venue.

COBA’s menu will offer a delectable fusion of Latin American flavors, refined with French techniques to present a tapas-style tasting experience, unlike anything Bangkok has seen before. From the signature Tapas Tower, which showcases an elegant medley of seafood including tuna tataki and obsiblue prawn tartare or wagyu tartare, to unexpected flavor combinations such as humita gyoza with Iberico ham, every dish will celebrate the richness of local ingredients innovatively and tantalizingly. This multi-dimensional menu will push culinary boundaries, ensuring every plate is a sensory journey.
COBA will elevate the dining experience further with main dishes that continue to blend global flavors with local flair. Highlights will include the saffron and lobster ravioli, miso-glazed black cod, and grilled beef tenderloin with spicy Mexican mole and mini tacos which exemplify COBA’s commitment to ingenuity and culinary craftsmanship.
The food is a fusion of South American recipes with local Thai products and French techniques. Our best seller is of course the Tapas tower that combines tastes from all around the world in each unique bite. Guests are also keen on the cutlets Lamb, miso cod, or our COBA's oyster with aguachile.

Learning with the best of the best in France (Jean COUSSAU, 2 Michelin stars, Michel GUERARD, 3 Michelin stars), I quickly run my own business before being Executive chef for the first time in a luxury resort in Arcachon, FRANCE, Thalazur - Les Bains d'Arguin, 2013.
After that, I moved to San Francisco, USA, to run Gary Danko Restaurant, 1 Michelin star, Relais&Châteaux property, 5 stars Forbes, 2022. I've finally been hired as Executive Chef back in French Alpes at Chalet Mounier, Petit Polyte, 1 Michelin star restaurant, in 2023 before coming to Bangkok for this extraordinary journey. It's just the beginning.
