ABOUT CHEF
A graduate of Mexico City’s esteemed CESSA Universidad, Chef Mauricio is a classically trained pioneer of Mexican cuisine. Chef Mauricio has spent the past 5 years working tirelessly in Thailand to introduce Thai people to the beauty and complexity of Mexican cuisine and culture.
Chef Mauricio has forged close partnerships with local vegetable farmers, dairy producers, butchers, and artisans cultivating chilies and herbs, weaving together a tapestry of traditional Mexican flavors with ingredients from the other side of the world. Through collaboration and innovation, he has created a first in Thailand, real Mexican food.
As the Executive Chef at Santianga Chef Mauricio creates Mexican cuisine in Thailand at a level only seen in Mexico. His enormous wealth of knowledge about Mexican cuisine, extreme patience, and an incredibly worldly view allows him to create dishes that impress even the most esteemed chefs and critics.
