Main courses focus on the best of land and sea: the aforementioned Black Opal Wagyu, a Centre-Cut Pork Chop from Chiang Mai black pork with homemade apple sauce, and line-caught Patagonian Toothfish from the South Atlantic. ABOUT CHEF
Chef Pakpilai “Som” Chainman serves as Chef de Cuisine at The Crystal Grill House alongside her leadership of other flagship venues. Born and raised in Bangkok, she graduated from Dusit Thani College and began her career at Thien Dong (Vietnamese restaurant) at Dusit Thani. She gained early exposure serving at the Royal Summer Residence, Klai Kangwon Palace in Hua Hin, before curating contemporary Asian cuisine at Ku De Ta Bangkok and working at The St. Regis Bangkok. She joined Bangkok Marriott Marquis Queen’s Park and was appointed Sous Chef before leading multiple dining venues including The Crystal Grill House. Known for her warm, approachable style and deep respect for Thai culinary traditions, Chef Som combines creativity and tradition to deliver memorable dining experiences.
