Villa Frantzen is the internationally acclaimed casual fine dining restaurant from the celebrated Swedish chef Björn Frantzén.
OVERVIEW
After making a name for himself with restaurants in Stockholm and Singapore (both, 3-star MICHELIN) Frantzén brought his innovative Nordic cuisine to Bangkok, opening Villa Frantzén in June of 2022.
Elevating the Villa Frantzén experience is the restaurant's stunning Villa Frantzén Cocktail Bar, a sophisticated and stylish retreat to bookend your evening, serving Nordic cocktails with Asian influences.
AMBIENCE
The two-floor, 60-seat restaurant has a "swanky interior, inspired by modern Nordic aesthetics" (Michelin Guide, 2023). From the main dining room, guests can view one of Bangkok's largest open kitchens. The glasshouse offers a more intimate setting, surrounded by a lush garden, artistically illuminated at night to recall the Northern Lights. The upper floor features private dining rooms for intimate dinners, small group events, or wine tastings.
The lounge is also home to Villa Frantzén Cocktail Bar, a distinctive craft Nordic cocktail bar that shares the same concept with the villa and is available for walk-in visits and reservations. Here, guests can come in occasionally for drinks and try a selected range of a la carte dishes from the villa. This makes the bar a unique space among the city's establishments, recently recognized by the Bangkok Bar Show Awards 2023 among the top 20 bars in the city.
MUST-TRY
Oyster 63.4C, French Toast with Kalix vendace roe, or the Prestige Selection Villa Frantzén 30g Caviar with jackfruit & coconut waffles.
FOOD
The journey at Villa Frantzén begins with a couple of canapés served in the villa’s lounge located in a cozy barn-like interior of the villa's standalone bar. The guests continue to the restaurant, to enjoy a unique multiple-selection 6-course tasting menu priced at 4,200 THB++ per person. They can enhance their experience with signature supplement servings, such as Oyster 63.4C, French Toast with Kalix vendace roe, or the Prestige Selection Villa Frantzén 30g Caviar with jackfruit & coconut waffles. Wine and non-alcoholic beverage pairing options complement the dinner, along with an extensive by-the-bottle selection from the Villa's vast wine cellar, which houses wines from both new-age and classic producers. After the dinner, guests can retreat to the lounge for a classic nightcap.

ABOUT CHEF
Nilas Corneliussen is a Swedish Dane, passionate about Thai cooking and fluent in Thai. He seamlessly bridges Frantzén Nordics & Asian influences. But Nilas never imagined a career in cooking. The tangled path that landed him the Executive Head Chef role in Bangkok started with Thai boxing in high school and training camps in Thailand. After a bad injury, he gave up the sport, and a day after graduation he was on a one-way ticket to study economics in Thailand.
Halfway into his master's degree, he found his calling in the kitchen. He then returned to Europe and worked his way up from Stockholm’s trattoria to Michelin-starred Esperanto, Noma, amidst winning silver on the Swedish team in the Bocuse d’Or finals. Before Villa Frantzén, Nilas headed Stockholm Surfers–an authentic, somewhat nerdy Szechuan restaurant.
