PROFILE
Sardinian-born chef Alessandro Frau is credited for starting the “molecular” and “modern” dining trend in Phuket decades ago at his fine-dining Italian restaurant Acqua. Drawing in both devotees that cherish authentic Italian tastes and adventurous epicureans obsessed with modernized gourmet fare, Acqua reinvents centuries-old recipes into mind-blowing creations that still retain traditional Italian flavors. The restaurant boasts one of the island's most impressive lists of wines, with over 550 selections of fine wines and vintage bottles.

The Acqua Experience offers a wide range of unique creations prepared with a selection of local and imported ingredients. From Sicilian red prawns to Puglian burrata cheese, Sardinian sea urchin, the best French oyster, exquisite American lobster, and the freshest seafood from Phuket. Other signature dishes include the 55 minutes slow cooked egg on a Parmesan cheese fondue, fresh black truffle, and crispy pancetta powder, the Acqua Signature Tortelli “Il Mare” stuffed with Burrata cheese in a sauce of vongole juice, squid ink, Sardinian sea urchin and marine plankton, the wood-fired roasted suckling pig, saffron and Violette potatoes, broad beans and it’s own sauce and not to miss the Memories of “Fior di Latte” milk semifreddo, foam, gelatin, sauce and gelato.
