At Age, you can hand pick your cut of meat. The chefs cook succulent cuts of the finest meat and the freshest seafood in our world-renowned Josper charcoal oven, creating tender aromatic delights. A climate-controlled dry aging process gives texture and aroma to the selected meat. Delicately cured seafood, condiments, and gastronomic accouterments, from cheese to truffles, pair with delectable cold cuts hung in the charcuterie room. Some of the favorites are the Age pan-seared potato gnocchi with sage, truffle sauce, Parmigiano Reggiano, 64º egg and shaved truffle, and as starter “Age parmigiana, Josper burnt eggplant, 24 months aged parmigiano reggiano sauce, smoked ricotta“.
