PROFILE
Born to a family of chefs and raised in Macau, Chef Tim Lam decided he was going to be a chef when he was fourteen years old and after a stellar quarter-century career in Macau and Hong Kong joined Jiang-Nan Chun. In this lavish, luxurious restaurant, his finely wrought Cantonese cuisine, blending tradition with modern tastes, is beautifully presented.

AMBIENCE
A total makeover about two years ago, undertaken with the underlying theme of xiang le zhu yi, meaning the principle of enjoyment and happiness, was completed in time for the arrival of Chef Lam, thereby seeing a total revitalisation of the restaurant. A wall of turquoise is echoed by blue streaks in the carpet, the white walls are hung with artworks, mahogany panels and tables are finely carved, red lacquer trays and red imperial costumes splash the room with warm colour, and the red upholstered chairs embrace the diners.
SERVICE
Four Seasons service means that everything is impeccable. The staff are especially good at describing the range of teas available.
FOOD
A full a la carte is served for lunch and dinner, and there are set menus and a vegetarian menu. Dim sum is served lunchtime. Use of the mesquite oven to roast Peking duck is unusual and effective, and the addition of caviar adds a salt tang. Deep-fried chicken in fresh lemon sauce is an art, in that the skin of the whole bird has to be continually basted with searing oil to become crispy. Chef Lam uses Spanish Iberico pork and wok-fried Australian beef in a traditional Cantonese technique to create new sensations from established favourites.
