Man Ho’s Executive Chinese Chef Leslie Du takes inspiration from classic Cantonese flavors and elevates each dish with his interpretation. Using a modern creative approach embracing the heritage of each dish, highlights include steamed snow fish with dried orange peel and Iberico ham, creating a complex and savory-sweet flavor profile where the delicate essence of the snow fish harmonizes with the citrusy brightness of the dried orange peel and the savory depth of the Iberico ham. Another standout is steamed scallops with shrimp soup and egg white – a beautifully balanced dish with a subtly sweet broth derived from scallops and shrimp, the delicate flavors of the seafood, and the creaminess infused by egg white. Lastly, Shanghai vegetable rice with foie gras offers a unique fusion of Shanghai-inspired flavors with the buttery richness of foie gras.

ABOUT CHEF
Chef Du has a strong background in modern Chinese cuisine, taken after his mentor Modern Chinese Master Chef Jereme Leung. His unique approach to the craft through the application of traditional cooking techniques in modern Cantonese cuisine reflects a style that has created a richly unique identity for the look and feel of Man Ho Chinese Restaurant since 2019.

Before joining JW Marriott Hotel Bangkok, Chef Leslie worked under his mentor the famous Chinese Master chef Jereme Leung for four and a half years. With Chef Jereme Leung at the helm, Chef Leslie was one of the kitchen brigades that helped to pioneer Modern Chinese Cuisines, which perfectly blended the concept of Modern Chinese Cuisines with classical Chinese provincial food, and set excellent examples with the integration of traditional Chinese cuisines with international elements which were very well received and much-lauded among gourmands alike, under Chef Jereme guidance. Jereme Leung has helped to shape Chef Leslie's food philosophy that it is today.
